Ethnic-style Marinated Summer Vegetables

Vegetables such as tomatoes for simmered dishes, bitter gourd, eggplants and green peppers that match nicely with oils are perfect for summer dining.

Ingredients

  • Eggplants
    2
  • Tomato
    1
  • Bitter gourd
    1/4
  • Green pepper
    1
  • bunch Cilantro (as preferred)
    1/2
  • Cooking oil
    As needed
Seasoning
  • vinegar
    2 tbsp
  • Thai fish sauce
    1 tbsp
  • sweet chili sauce
    3 tbsp
  • light brown cane sugar
    1 tbsp
  • garlic (grated)
    1 clove
Variation
  • White-meat fish
  • Salt and pepper
    As needed
  • Starch
    As needed

Directions

  1. Chop the eggplant and green pepper into chunks. Remove seeds from the tomato before chopping it, and remove the bitter gourd seeds before cutting into two-centimeter slices.

  2. Deep fry all of the vegetables, except the tomato, in an appropriate amount of oil.

  3. Mix the seasoning ingredients.

  4. Toss the seasoning, deep-fried vegetables and tomatoes together and garnish with cilantro if desired.

Variation
  1. Sprinkle salt and pepper on the white-meat fish before coating with starch and deep frying.

A useful tips

Removing the seeds from tomatoes will prevent the dish from getting soggy.
