Ethnic-style Marinated Summer Vegetables

Bitter gourd1/4

bunch Cilantro (as preferred)1/2

vinegar2 tbsp

Thai fish sauce1 tbsp

sweet chili sauce3 tbsp

light brown cane sugar1 tbsp

White-meat fish

Directions

Chop the eggplant and green pepper into chunks. Remove seeds from the tomato before chopping it, and remove the bitter gourd seeds before cutting into two-centimeter slices.

Deep fry all of the vegetables, except the tomato, in an appropriate amount of oil.

Mix the seasoning ingredients.

Toss the seasoning, deep-fried vegetables and tomatoes together and garnish with cilantro if desired.
Variation
-
Sprinkle salt and pepper on the white-meat fish before coating with starch and deep frying.

Toss the deep-fried fish with the ethnic-style marinated summer vegetables.
A useful tips
Removing the seeds from tomatoes will prevent the dish from getting soggy.
