The set contains Inaniwa udon noodles from artisan Junichi Takahashi, and Sarashina and matcha buckwheat noodles created by the third-generation owner of Shinshu Togakushi Soba restaurant, Shinya Koide. Takahashi has dedicated his life to producing Inaiwa udon, and he delicately hand-makes each udon strand in a remote studio deep in the mountains, almost entirely alone. There is careful attention to the ingredients: the wheatflour is a blend of local flours from Hokkaido; the salt is sea salt from Ako with added bittern; and the water he has used for many years is sourced from the Ohu Mountains.
The set also presents Sarashina buckwheat noodles made with buckwheat flour from Hokkaido, a region of highest buckwheat production. Koide blends thebuckwheat with meticulously selected domestic ingredients, resulting in its pleasant texture. The aromatic matcha buckwheat noodles feature matcha supervised by rank-10 tea mater Yasuyuki Suda. Rank-10 is the highest honor for tea mastership.
